Making Your Own Hazelnut Paste

If you are making a gelato type product, why not make your own hazelnut paste? It’s a better quality ingredient at half the cost.

Ingredients:

3 pounds, 5 ounces      hazelnuts

2 pounds                        sugar

3 ½ ounces                   butter

¾ ounce                        cinnamon

10 ½ ounces                 water

Preparation:

Grind and lightly roast the hazelnuts. Mix all the ingredients together, and mix in a food processor to a fine but tight mixture.
