14 ounces – Water
2 ½ pounds – Frozen Strawberries, thawed
8 ounces – Good quality champagne
10 ounces – Sugar
Defrost the strawberries. Mix thoroughly the dry sugar hot water and blend thoroughly. Puree strawberries, retaining all the juice from this mixture. Pour all the ingredients into the batch freezer, except the champagne. Turn on the dasher for 2 minutes to stir the mixture together. Set timer for 15 minutes. Turn on refrigeration and begin batch. As mixture firms up and looks wavy, add the champagne, continue freezing for another two minutes, turn off refrigeration and extrude finished product.
